MISS 322 Nourishing OVC to health on the Mission Field, 3 credits

Malnutrition is a silent killer in millions of orphans and poor children around the world, even those who have a full belly. According to Unicef, “Nearly half of all deaths in children under age 5 are attributable to undernutrition. This translates into the unnecessary loss of about 3 million young lives a year.” This course explores the various nutrients, their sources, digestion, absorption, metabolism, interaction, storage, and excretion. Current research is presented against a background of basic nutritional concepts. Special emphasis is given to the role nutrition plays in the current health care delivery system and how nutrition can be emphasized to promote health maintenance.
